Sugar Free, Gluten Free Banana Muffins

Yes, yes, and yes! This is the perfect snack for the middle of your day when you hit that moment of crash and energy deficit. These muffins are the right amount to curb your appetite and - even better - they are sugar free so you don't crash off them. The only sugar in these muffins is from the banana itself, which is fantastic!


A few times in the last few years, I have gone on a sugar free diet to reset my gut - usually to clear a rosacea flare up or reduce inflammation in my body. So snacks like this have been really important to keeping me away from unhealthy alternatives.


Ingredients

All Purpose or Gluten Free Flour - 1 ½ cups

Baking Powder - 1 teaspoon

Baking Soda - 1 teaspoon

Sugar Alternative - ¾ cup equivalent to sugar

Bananas - 3 mashed (around a cup)

Using ripened bananas will make it easier to mash them for use in the recipe

Egg -1, whipped

Vegetable Oil - ⅓ cup

Vanilla Extract- 1 teaspoon

How to Make

  1. Preheat your oven to 350 and prep your muffin pan for nonstick.

  2. In a mixing bowl, whisk together the flour, baking soda, and baking powder. Then stir in the sugar alternative that you have chosen to use. In a small bowl, combine together the mashed bananas, whipped egg, and the oil. Then stir in the vanilla extract. (Do not over mix)

  3. Gently stir in the wet ingredients with the dry ingredients in the mixing bowl until just mixed.

  4. Bake for 20-25 minutes or until a toothpick comes out clean.
